Hidden Treasure Cookies

Ingredients
  • ¾ cup Margarine or Butter
  • ½ cup Sugar
  • ¼ tsp Baking Powder
  • 1 Egg Yolk
  • ½ tsp Vanilla
  • ¼ tsp Almond Extract (optional)
  • 1¾ cups All-Purpose Flour
  • Small Candies (small gumdrops, jelly beans, candy-coated chocolate)
  • Colored Sugar or Small Multicolor Decorative Candies

  • Take a large mixing bowl and place margarine or butter in it. Run the electric mixer on medium speed and blend well for about half a minute.
  • Put sugar and baking powder. Beat until completely mixed.
  • Add egg yolk, vanilla, and almond extract. Continue to beat until combined.
  • Gradually, add as much flour as required, and beat the mixer at medium speed. Remember to scrape the sides of the bowl occasionally.
  • Do not chill the dough.
  • Place one candy on a flat surface.
  • Now with the help of rounded teaspoon, shape the dough around the candy. Do the same with the rest of the cookies.
  • Add colored sugar or decorative candies.
  • Place all the candies 2 inches apart on a greased cookies sheet.
  • Bake at 375 degrees F for about 10 minutes until the edges turn firm.
  • Do not allow cookies to turn brown. Cool the cookies on a wire rack.
  • The cookies are ready to enjoy!
Hidden Treasure Cookies (Egg-Less and Milk-Less)

Ingredients
  • ½ cup Cocoa Powder
  • 1 cup Sugar
  • ¼ cup Vegetable Oil
  • 2 Egg Replacers
  • 1 tsp Vanilla
  • 1 cup Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • ¼ cup powdered Sugar
  • Mini Marshmallows (to decorate)
Method
  • Combine cocoa, sugar, and oil in a large bowl. Mix thoroughly.
  • Add egg replacer and vanilla. Beat well.
  • Stir in flour, baking powder, and salt. Cover the mixture and put it in the freezer for about 30 minutes.
  • Preheat oven to 350 degrees F. Grease a large cookie sheet.
  • Roll the dough into 1-inch sized balls.
  • With the help of your finger, poke a tiny hole in the cookies and place two marshmallows inside them.
  • Cover the dough again from the top into a ball. Coat them with powdered sugar.
  • Bake for 10-12 minutes. Allow the cookies to cool on a wire rack.

1 egg replacer = 2 tbsp water + 1 tbsp oil + 2 tsp baking powder
